can anyone help me understand why the indian briyani hawker does this?
An honorable member of the Coffee Shop Has Just Posted the Following:
he scoops a portion of basmati rice, then put the mutton and curry on the rice, then scoops another portion of basmati rice to cover up and bury the mutton and gravy. why does he do that? any consequential change to the briyani by doing that? or it's simply a waste of time?
